- 1 generous cup
- mixed fresh or frozen berries
- 1/4 cup
- boiling water
- 1 Tbsp
- chia seeds
- 1 Tbsp
- maple syrup or honey
- 2/3 cup
- rolled oats or untoasted muesli
- 1 teaspoon

- 3/4 cup
- unsweetened Greek yogurt
- coconut flakes and mint leaves to decorate – optional
- To make the compote pour the boiling water over the berries and mash them a lightly with a fork. Stir in the chia seeds and syrup and set aside. Mixture will thicken slightly as it cools.
- In a medium bowl combine the oats, chia seeds, grated apple and milk.
- Mix lightly and divide between to glasses or bowls approx 300 ml capacity.
- Add a generous dollop of Greek yogurt and ¼ of the compote to each then Place in fridge overnight.
- To serve add a dollop more yogurt and top with remaining compote and a sprinkle of coconut flakes if desired. Tip: Make in lidded containers for an easy portable breakfast to take to the office. Add a drizzle of honey or use a sweetened yogurt if you prefer.
